How is the dying process perceived in-game? Adventurers are resurrected, but do characters fade into thin air after death, or do the corpses stick around for a little bit? Is the dying process the same for People of the Land and monsters?

The traditional death sequence for an adventurer is to shatter into nothing as multicolored bubbles rise into the air. Soon after, they are revived in the sanctuary of the last town they entered. When monsters die, the animation is very similar.
As we have not witnessed the death of a Person of the Land in the show yet, it can only be assumed that they will also burst into white light as Adventurer. However, recent plot events may or may not discourage the technicolor bubbles from scattering into the air.

Is there a way to preserve the bodies, so to speak? For instance, this account will be a Person of the Land, a farmer who raises sheep. If she wanted to kill one of the sheep to create a meal from the meat, what happens? Would the meat appear in her inventory?

In terms of canon, the meat becomes itemized, like it would in a game. The "drops" are more Diablo style, where they drop to the ground, but you cannot cut up a boar yourself and use every bit of it. If you play FFXIV, the "meat" is sorta like the meat you would get in FFXIV.

I would assume that the meat would appear in your inventory in a relatively cut shape. There are a few cooking scenes early on in the anime you can use as a basis for this. You can pretty much decide whatever shape you want for it to pop up in as it won't be an official item, and after that you can materialize it in the kitchen and interact with it just like you would in the real world.

In the anime however, they showed that they had to capture boars alive for their cooking. If they just kill the boar on the spot, they indeed get cooking ingredients as item, but I think it just doesn't have the same taste as a normal food. But by bringing the boar on the kitchen, they can cook it immediately like that, and get all the taste it should have kept.
... Or something like that. Really, it was not completely explained, so there's still many obscure points about their methods.
As for Landers and Adventurers, I believe that the body would be kept as is for 5-10 minutes. This is a delay in which Resurrection spells can be used before the character bursts into bubbles. Of course, resurrection spells don't work on Landers, but I think they at least delay the time before they burst into bubbles by a small bit.

The reason they captured the boar alive was because cooks get more ingredients if they are the ones to kill the beast.
