Figured that suggesting this is going to do more good, than harm.
From reading all of the things, it would seem that this particular incarnation of the Log Horizon universe is set in the UK. That said, it would make far far more sense to either add a Knight class, or to replace the Samurai class *with* a Knight class. The traditional 'sword fighter' for the kind of time frame of the Log Horizon universe in this area would be a Knight, not a Samurai. If this is a recently released server, why not have a recently released class, which is specific to this server much like the Samurai and the Shaman are specific to the Japanese server?
You could probably base Knight skills around chivalry and horse based combat. Good defense, if defending someone else, and lots of skills that require a mount of some description.
Just an idea.

there was something they did were people could suggest server class names, of course Knight is a sub class, but it would make sense for Nordic servers to have Knights due to it including England

However, I wouldn't be against adding in some of the other localized classes in the future, especially as we explore regions beyond the UK. I know Pirate was mention as being the replacement for Samurai in the North American version of Elder Tale, with it having a vastly different skillset and playstyle than the Samurai instead of just being a palette/name swap.

Samurai are pretty much the knight class, though they lack the capacity to wield a shield which is saddening. Perhaps there can be two types of shields, lighter and heavier, and Samurai and a few other classes could use the lighter ones, whereas only Guardians can use the heavier ones? It just seems odd to me that in this medieval fantasy world, shield should be quite prevalent, but they're not. That's all I really have to say.

Well, the North American server has the Samurai class as a 'Pirate' and the Shaman/Konnugi class as a 'Mystic'.
I think both would work quite well with a British server as localised variants. Others that we could consider are Knight (obviously. Maybe similar to Guardian, but more focused towards 2 handed weapon usage, and mounts) maybe a Witch (a curse and Damage over Time focused magic-user), and an Archer/Scout type class (think your stereotypical British Longbowman, turned into a game format).

Do note that while shields are not currently optimized with the Samurai style, they are still able to wield them. Incompatible gear suffer a -50% damage or defense, normally making them rather useless, but if you intend to use 1-handed equips anyway, it might be a feasible choice. That or we'll just give them small shields and bucklers anyway. I'll need to bring it up with other staff.
Naturally, the main difficulties of designing an entirely new class is probably the sheer amount of skills that we'd need to plan for a class. So for classes that are mostly regionalized and have a slightly different playstyle compared to the original, I think a more likely possibility could be some type of accessory emblem that changes the properties of your class. Adds a few new skills, changes the weapon proficiency lists somewhat, but at the cost of disabling some other skills from the original class. Maybe along the following:
But at the moment, mounted combat is mainly the subclass Cavalier's specialty while archery mastery is given by the subclass Hunter. However, if there's popularity for any particular style not already covered by the current main classes, it might be possible for us to consider.

What about a Brawler class? It seems to fit Murasaki's descriptions of the new guardian/monk, depending on its implementation. Also, if we're going medieval, then what about emphasis on religion? Party class bonuses would be interesting as well. For example, a templar/cleric duo would boost defense for the former and healing strength for the latter (religious conviction). Just a thought. I do concede that it would make everything a wee bit more complicated.
